Today’s meals

Today for breakfast we made oatmeal with quick oats powdered creamer cinnamon sugar and diced apples and drizzled with honey. It was super yummy and pretty healthy, and the kids were excited about having it.

For lunch we had hot dogs with bread, chips, carrots, cucumbers and bananas.

I went shopping before dinner, since I was supposed to go Friday and still hadn’t gone, and picked up quite a bit of stuff. For dinner we had bacon cheese burgers. I was the only one who chose blue cheese, the others picked havarti cheese. The burgers were super yummy and they were served with chips and baked beans.

It has been a crazy week since I have been down for physical reasons and not able to do much but everyone has helped out and the house isn’t a total disaster.

I bought strawberries at the store tonight and I look forward to making strawberry cupcakes with strawberry icing. I will also be baking cupcakes for my daughters birthday to take to co-op with us. I am hoping my feet will get better so I can get to baking!

Reading Challenge 2012: Update

I have The Money Saving Mom Budget on hold at the Library in audio book and I could not find Pour Your Heart into It, So I decided to give this one a try.

The Hunger Games Trilogy

This past week and a half I have been reading The Hunger Games Trilogy written by Suzanne Collins and Published by Scholastic.  I must admit it only took me that long because I was waiting to get the second two books from a friend.

I was obsessed with the books much like I was with the Twilight series. The series is an easy read with lots of action, blood, love, and confusion. Which to me the love and confusion seem perfectly relatable for many people especially the teens who this series was originally geared toward. The main Character is Katniss Everdeen, a 16 year old girl who Takes care of her Mother and younger sister. She provides food for the family by hunting animals with one of her bows her Father made before he died in a mining accident.  She is joined in the unlawful hunting experience by her best friend Gale, who also has to provide for his family after his father died in the same mining accident. The book is set in the future where after the destruction of North America there is a nation formed called Panem which includes 13 districts and the capitol.

The first book called The Hunger Games lets us experience the 74th annual Hunger Games in which Katniss (who volunteered to go for her younger sister Primrose) and Peeta Mellark (a baker’s son) are selected to represent District 12 where they live.  The Hunger Games are set up by the Capitol to remind the remaining 12 Districts (since the 13th started a rebellion and was eradicated) who is in charge.  The Capitol is the only place where 2 children are not chosen to play in the Hunger Games which of 24 participants will only have one surviving victor.

The Hunger Games are based on survival and killing the other players before they kill you. This includes hunting for food and learning to use unfamiliar weapons.  The 74th annual games bring a twist when Peeta confesses of his love for Katniss only days before they begin.  The government is forced to make some changes in order to appease the viewers from the Capitol, whom have fallen in love with the “love birds” story.

As the rest of the books play out each character is tested and tried physically, mentally, and emotionally almost beyond what they can handle and in some cases way beyond. Katniss is torn between Peeta and Gale and Both are in love with her.

As a 30 year old woman I find myself thinking ‘I totally see where some of these characters are coming from’. The hardships forced on them like hunger, harsh government regulations,  and The Hunger Games are unlike anything we see in America.  The emotional trials they are put through like losing a parent, having to choose between 2 they really love, and taking care of family at great cost, are things a lot of Americans do go through. As I was growing up there were a lot of things we did without. At times we had no running water, gas, electricity or food. Not often, but were enough to help me relate to the characters in this book.  I am by nature a person who takes it upon myself to take care of those around me even when it is not my responsibility, which is a common characteristic of Katniss, and Gale and many others in the books.

Catching Fire and Mocking Jay, the other two books in the trilogy, do not disappoint in keeping with the theme of complex moral decisions, hardships, starvation, emotional turmoil, and the effects of war and and control hungry government.

Overall it was a great series, and based on how fast I read it, you can tell how much I enjoyed it. My only complaint is about the last book. I wish the end and epilogue explained more of how things happened.  That is probably the romantic in me, and since the book was not centered around romance, but war and tragedy, the lack of details makes sense. I am looking forward to the movie The Hunger Games which comes out March 23, 2012, and I encourage you to read the book before the movie comes out!

Chicken Stroganoff

Chicken Stroganoff

1 can chicken (10 oz)
1 can cream of mushroom soup
8 oz sour cream
1 piece of bacon
Worcestershire sauce
Garlic salt
Lowrys salt
4 crumbled Ritz or club crackers

Put bacon in microwave to cook for about 2 min. Heat oven to 375. Mix soup, chicken, sour cream, and (Worcestershire garlic and lawrys to taste) and crumbled bacon in a 8×8 baking dish. Top with 4 crumbled Ritz or club crackers. Bake in oven about 25-30 minutes.

After I put the stroganoff in the oven I start the rice. I add 1 bullion cube and a little butter and salt to the rice before I turn on the burner.

Serve the Chicken Stroganoff over the seasoned rice with green beans on the side.

I hope you enjoy this recipe, it can easily be doubled to feed more than 4 people or have yummy leftovers.

Pigs In The Blanket

This is one of my favorite freezer recipes of all time, Pigs in the Blanket! Yes I know this may sound strange for a freezer recipe but It is totally yummy, and if you dont eat them all before they even get back to the kitchen, they Freeze and reheat wonderfully!

Pigs in the Blanket

2 pkgs dry yeast ( 2 1/4 tsp per pack* Buy in bulk it is much cheaper!)
2 c very warm water
2 tsp salt
1/2 c sugar
1/4 c melted shortening
1 beaten egg
6 1/2- 7 cups flour
2 pkgs 8 count hotdogs
about 1 c cheese

Combine first 2 ingredients, add sugar, salt, and 1/2 cup four and beat for 2 minutes.
Add egg and melted shortening, beat until smooth.
Add flour 1 cup at a time, about 5-6 cups. Knead until smooth!
Set aside in greased bowl, cover with towel, let rise until doubled in size. (this happens quicker on top of the stove if oven is on or put inside the oven after turning it on for about a minute and then turning it off.)
Punch down dough, divide in half
Roll out 1/2 dough into a large circle and spread with softened butter (about 1/4 stick per circle)
Cut with pizza cutter into 16 pieces
Sprinkle with Cheese
Place 1/2 hotdog on edge of each triangle and toll
Place on greased cookie sheet (or what ever you have that will work lol)
Let rise again!
Bake in oven @ 400 for about 12 minutes
Remove to wire rack to cool and then bag and freeze or eat them all up!

This recipe is great for crescent rolls also just omit the hot dogs and cheese! I havent tried it yet but I bet this would be great with honey drizzled on before cutting and rolling up the crescents!

Based on a recipe calculator spreadsheet I saw on moneysavingmom the bread part of this recipe costs $1.79 for 32 Crescent rolls! That is .06 a roll! add the hot dogs and cheese and it is more like .18 a Pig in the blanket! Pretty good by my book, and if you bought the cheese and hot dogs with coupons it would be even cheaper.

CrockPot Cream Cheese Chicken

Tonight for Dinner we had CrockPot Cream Cheese Chicken, it was super simple to make and I just changes a little bit from the recipe that I got from A Year Of Slow Cooking.

I used one Package of Chicken breast (which was 3 large ones)
2 Cans Cream of Mushroom Soup
1 Package Italian Dressing Mix
about 2 Tablespoons of Chicken Broth
1 Can of water
2 Blocks of Cream Cheese

Put all the Ingredients in the CrockPot EXCEPT the Cream Cheese. Cook on low for 6 hours or so ( I think mine cooked a little longer) Shred the Chicken in the CrockPot. Add Cream Cheese and continue cooking on low for 30 Minutes while you boil the noodles and get the table set and such!
Stir up and Serve over noodles!

We loved it, It was seasoned well, and so creamy. There was enough leftover (which I planned for) to make Enchiladas tomorrow or the next day! I will let you know how those turn out.

We served this with Crescent Rolls, Peas and Creamed Corn.

Mocha Cupcakes

My kids helped me bake again. This time we made mocha cupcakes with a butter cream frosting. Check out the Recipe here at My Baking Addiction. They were super yummy, moist and delicious and the chocolate chips were a perfect addition.

I will be making this again with maybe a mocha frosting next time as well:) I also think I will try out some more of My Baking Addictions Recipes!

Virtual Money this Week

Through out the week when I have free time I work on making a few extra dollars as I can. I use Swagbucks, Fusion Cash, and Amazon Mturk. These are my current ways to earn but I have used many others in the past Including but not limited to Inbox Dollars, and Mypoints.

This week has been rather lacking in the extra money department since it was my anniversary and we have all been sick with a cold and now there seems to be a stomach virus going around. So with all that said I have not been on very much this week. Virtual Money is what I call the money I have earned that I have yet to see in my amazon account, bank account, or in my hand.

Like I said I have really been slacking this week and hope to get it up higher next week. I usually try to get at least .50 a day on mturk. I know this is not tons of money, but it is made when I have free time in between cooking, cleaning, homeschooling 2 kids and chasing a toddler amongst other things. We generally use this money for gifts or diapers on amazon, or extra cash to pay bills. I was able this past week to go to target and buy a vacuum cleaner with the money I made online.

Failure and Success

Tonight for dinner I made a Pepperoni Pizza using leftover Bolognase Sauce from earlier this week. I substituted Honey for the sugar in the Dough Recipe and assembled it on my pizza stone instead of trying to figure out how to move it once assembled. The End result? Well it was ok I guess, the dough seemed under cooked, and really soft on the bottom while the top was about to burn.

I was lamenting over my failure of pizza (which does not happen very often) and trying to figure out exactly where I went wrong. As I did this I drank a cup of coffee with White chocolate caramel latte creamer and ate a yummy Mini Pumpkin chocolate chip muffin.

Finally it hit me. I am not a failure of a cook, the Mini Muffins were scrumptious even at 3 days old. I will just have to figure out where I went wrong and dust off my apron and make a better pizza next time. I have had many Successes in the Kitchen and I will not let an ok/ not my favorite pizza get me down.

As for the Coffee and Mini Pumpkin Chocolate Chip Muffins I am going to enjoy them and let them heal my hurts lol.
