Homemade Chicken noodle soup

For lunch today we had homemade chicken noodle soup. After making 2 batches of chicken stock from a Crockpot whole chicken I needed to use up some of that wonderful healthy stock.  Last night we had company over and I made way too many noodles so I threw those in at the end to warm them up.

So I used about:
6 cups or broth
1 chicken breast
1/2 onion diced
1 carrot
1 stick of celery
And the left over pasta
Garlic and salt and pepper

We served it with garlic cheddar biscuits made out if Bisquick.

Chicken Stroganoff

Chicken Stroganoff

1 can chicken (10 oz)
1 can cream of mushroom soup
8 oz sour cream
1 piece of bacon
Worcestershire sauce
Garlic salt
Lowrys salt
4 crumbled Ritz or club crackers

Put bacon in microwave to cook for about 2 min. Heat oven to 375. Mix soup, chicken, sour cream, and (Worcestershire garlic and lawrys to taste) and crumbled bacon in a 8×8 baking dish. Top with 4 crumbled Ritz or club crackers. Bake in oven about 25-30 minutes.

After I put the stroganoff in the oven I start the rice. I add 1 bullion cube and a little butter and salt to the rice before I turn on the burner.

Serve the Chicken Stroganoff over the seasoned rice with green beans on the side.

I hope you enjoy this recipe, it can easily be doubled to feed more than 4 people or have yummy leftovers.

Pigs In The Blanket

This is one of my favorite freezer recipes of all time, Pigs in the Blanket! Yes I know this may sound strange for a freezer recipe but It is totally yummy, and if you dont eat them all before they even get back to the kitchen, they Freeze and reheat wonderfully!

Pigs in the Blanket

2 pkgs dry yeast ( 2 1/4 tsp per pack* Buy in bulk it is much cheaper!)
2 c very warm water
2 tsp salt
1/2 c sugar
1/4 c melted shortening
1 beaten egg
6 1/2- 7 cups flour
2 pkgs 8 count hotdogs
about 1 c cheese

Combine first 2 ingredients, add sugar, salt, and 1/2 cup four and beat for 2 minutes.
Add egg and melted shortening, beat until smooth.
Add flour 1 cup at a time, about 5-6 cups. Knead until smooth!
Set aside in greased bowl, cover with towel, let rise until doubled in size. (this happens quicker on top of the stove if oven is on or put inside the oven after turning it on for about a minute and then turning it off.)
Punch down dough, divide in half
Roll out 1/2 dough into a large circle and spread with softened butter (about 1/4 stick per circle)
Cut with pizza cutter into 16 pieces
Sprinkle with Cheese
Place 1/2 hotdog on edge of each triangle and toll
Place on greased cookie sheet (or what ever you have that will work lol)
Let rise again!
Bake in oven @ 400 for about 12 minutes
Remove to wire rack to cool and then bag and freeze or eat them all up!

This recipe is great for crescent rolls also just omit the hot dogs and cheese! I havent tried it yet but I bet this would be great with honey drizzled on before cutting and rolling up the crescents!

Based on a recipe calculator spreadsheet I saw on moneysavingmom the bread part of this recipe costs $1.79 for 32 Crescent rolls! That is .06 a roll! add the hot dogs and cheese and it is more like .18 a Pig in the blanket! Pretty good by my book, and if you bought the cheese and hot dogs with coupons it would be even cheaper.

CrockPot Cream Cheese Chicken

Tonight for Dinner we had CrockPot Cream Cheese Chicken, it was super simple to make and I just changes a little bit from the recipe that I got from A Year Of Slow Cooking.

I used one Package of Chicken breast (which was 3 large ones)
2 Cans Cream of Mushroom Soup
1 Package Italian Dressing Mix
about 2 Tablespoons of Chicken Broth
1 Can of water
2 Blocks of Cream Cheese

Put all the Ingredients in the CrockPot EXCEPT the Cream Cheese. Cook on low for 6 hours or so ( I think mine cooked a little longer) Shred the Chicken in the CrockPot. Add Cream Cheese and continue cooking on low for 30 Minutes while you boil the noodles and get the table set and such!
Stir up and Serve over noodles!

We loved it, It was seasoned well, and so creamy. There was enough leftover (which I planned for) to make Enchiladas tomorrow or the next day! I will let you know how those turn out.

We served this with Crescent Rolls, Peas and Creamed Corn.

Chocolate Banana Bread

This week one of my goals was to make Chocolate Banana Bread. I saw the recipe on Money Saving Mom and was looking forward to trying it.

My daughter and I worked on it this morning after Breakfast. It was super simple to make and Kathryn loved scooping and stirring..  If you are looking for a yummy chocolate and banana bread I would have to say this one is awesome. I had half a piece and it was perfect. It is also great with a little salted butter on it 🙂

In the picture you will notice little white pieces, I did not mash the banana up all the way and I think it gives a nice added texture to it.

I must not also because YES it was That good… When you put Strawberries with a homemade strawberry sauce and homemade whipped cream on top of this chocolate banana bread it is TOTALLY AWESOME lol.  Yes as I said it was that good, you should try it.

Wonton Wrapper Experiment #3: Dessert chips

Well this one is fast and simple.

We (my kids and I) brushed melted butter onto the wonton wrappers, sprinkled them with cinnamon sugar , cut them into strips and baked them in a 400 degree oven for about 8 minutes.

They were pretty tasty with the redi whip 🙂 but I think I would like it better fried instead of baked.

Still it was a very fast/simple/ kid friendly snack 🙂

Wonton Wrapper Experiment #2: Spinach Ravioli

Trying out my Wonton Wrappers again I made a Spinach and Cheese Ravioli. It was pretty simple but time consuming… Then again aren’t all homemade Raviolis?

Spinach and Cheese Wonton Wrapper Ravioli

1 bunch of spinach (chopped)
1 TB butter
1 Garlic clove Minced
1 cup Mozzerella
1/4-1/2 cup parmesean cheese
Wonton wrappers
water
and a touch of nutmeg (because I heard somewhere it was good to do lol)

Heat butter in a skillet with garlic till melted. Add spinach, If you forget to chop it (lol like me) its ok you can use scissors later. Saute till it gets all small and limp like.

Combine the cheese and nutmeg with the slightly cooled spinach. Place about a tablespoon (or less if you are using one wrapper) into wrappers. Wet the edges of the wrappers with water and either fold over into a triangle or place another wrapper on top( with wet edges) and seal with a fork (see picture).

You can let the Raviolis hang out in the fridge covered for about 2 hours or cook them now. Just add the Raviolis one at a time so they dont stick together in the beginning  to a pot of boiling water and boil for about 2-3 minutes. I was able to fit about 6-8 in my pot at the same time.

We served it with a Tomato pasta sauce, although it could be served with Pesto, Alfredo or a creamy garlic butter. There are many possibilities with this one.

I would say the only draw back I saw was the raviolis are really big when you use two wrappers for one ravioli. I think next time (especially for the kids) I will make them with one wrapper folded like a triangle.
